Roasted Vegetables

Ingredients

4 or more zucchini
olive oil
shredded Parmesan
thyme
salt and pepper

Directions

Wash zucchini and slice into boats. Arrange
on a baking sheet and drizzle with olive oil. Top
generously with shredded Parmesan. Sprinkle with
thyme and salt and pepper.
Heat oven to 400.
Bake for 15 minutes or until lightly caramelized.
