Harvest Scalloped Corn
Ingredients
2 cups whole kernal corn, frozen
2 cups potato chunks, peeled
2 cups broccoli florets
1/2 cup thinly sliced celery
1/4 cup shredded carrots
1 cup Italian bread crumbs
1 1/2 cups sour cream
2 eggs, beaten
1/2 cup milk
1 teaspoon garlic powder
sea salt to taste
Directions
Combine corn, potatoes, broccoli, carrots, and celery. Pour into greased rectangular baking pan. Sprinkle bread crumbs over vegetables. Beat eggs, sour cream, milk and garlic together. Pour over vegetable mixture. Bake at 350 degrees for 35 to 40 minutes, until set in the center.
